Cheese and Leek Soup with Minced Beef

This quick soup is a real family favorite. With leeks, minced beef, and a mild cream cheese combination, it's wonderfully creamy – Perfect for cold days or as a filling dinner.

Ingredients for 4 servings

• 800g leeks (unpeeled)

• 2 cloves garlic

• 500g ground beef

• 1 tbsp rapeseed oil

• 1 L vegetable stock

• 200g cream cheese (double cream)

• 50g grated cheese (e.g., Cheddar or Mountain cheese)

• Salt and pepper

• Nutmeg (freshly grated)

• Clean the leek, wash it thoroughly, and cut it into thin rings.

• Finely chop the garlic.

2. Fry the minced meat.

Heat the oil in a large pot. Fry the minced meat until lightly browned.

3. Add leek and garlic

Add leek and garlic to the pot and sauté for 5 minutes, until the leek collapses slightly.

4. Finish the soup

• Deglaze with vegetable stock and bring to a boil

• Simmer for 5 minutes
